Summertime Sandwiches

My favorite part about Summer is being outside and in the heat. Yes, surprisingly I love being in the hott Summer sun. It gives me an excuse to drink as many daiquiris and eat as much ice cream as I want! I found this delicious recipe in my Better Homes and Gardens daily newsletter, I altered it a tad to make it a bit more "me" friendly! These Summertime Sherbet Sandwiches will leave you anything but HOTT!


Ingredients:
1 Package of refrigerated ready to bake sugar cookie dough
2 tsp. milk
4 tsp. coarse sugar
1 1.75 qt tropical fruit or rainbow sherbet

Directions:
1. Preheat oven to 350 degrees F. Break each square of cookie dough and place on a greased baking sheet. Brush the tops of dough with milk and sprinkle with sugar.
2. Bake according to the directions on the package (about 11 minutes or until edges are lightly browned). Cool on cookie sheet 1 minute. Transfer to wire rack; cool completely.
3. Place a large baking sheet in freezer. Cut carton from sherbet. With a very sharp knife, cut in half lengthwise. Cut again in 1-inch slices. Halve each slice crosswise. Return to freezer for 1 hour or until firm.
4. To assemble sandwiches place sherbet slice between two cookies, sprinkled side out. Wrap in plastic; and freeze 4 hours or until firm. Cookies may be frozen for up to 3 months.
